Tomato Beef Noodle Soup
This comforting soup is a hearty blend of tomatoes, beef, shrimp, and noodles, with added depth from cheese, seaweed, and yam threads. A flavorful meal perfect for any time of the year!
Ingredients
2-4 Tomatoes (chopped)
Noodles (your choice)
Salt (to taste)
Ketchup (2-3 circles)
White pepper (to taste)
Sugar (to taste)
Soy sauce (to taste)
Shrimp paste or shrimp balls (rolled into balls)
Seaweed (optional)
Any type of cheese (your choice)
Yam thread (optional)
Beef rolls (short rib rolls recommended)
Instructions
Prepare the Shrimp Balls: Roll shrimp paste into balls and set aside.
Boil Water: Bring a pot of water to a boil. Cook the shrimp balls until done, then remove them from the water.
Cook the Beef: In the same pot of water, briefly boil the beef rolls until just cooked through. Remove and set aside.
Drain the Water: Pour out the water used for boiling the shrimp and beef.
Cook the Tomatoes: Heat oil in a pan. Add the chopped tomatoes and sauté. Add 2-3 circles of ketchup, salt, sugar, white pepper and soy sauce, adjusting to taste. Cook until the tomatoes soften and form a sauce.
Add Noodles: Once the tomato sauce is ready, add the noodles to the pot and cook until softened (Long you cook it, the better the soup noodle)
Finish the Soup: Add the cooked shrimp balls, beef rolls, and yam thread to the pot. Stir to combine.
Add Toppings: Just before serving, stir in the cheese and garnish with seaweed on top.
